What should I start with?

Read the FAT sources is a good place to start
But frankly the courses offered by our gracious hosts are the best place to start. That's what I did over 25 years ago (twice)

I'm a beginner and looking for something easy
Is it considered easy? will it teach me everything to start implementing heavier file systems?
There is nothing.., absolutely, positively, nothing about writing Windows file systems that would qualify as “easy.”
And, yes… I’m serious.
