I’m afraid that extracting data from EMI of a parallel bus is from the same lore as extracting data from a HDD after a single overwrite. There is just too much other noise going around.

True. But who said it was parallel? SATA is a serial bus.

It’s an LVD bus, with controlled slopes and impedance. As such, its EMI are of the same order of magnitude or lower than the mainboard noise.
