Two sessions at once on the same server?

Suppose I had two monitors, two mice, and two keyboards on the same PC, and
I’m running Server.

Does anyone know if there would be a way to treat each of those groups as a
separate logon session?

Not really w/out a lot of special software. The system coalesces all
hardware input into one virtual device. You could try to rig an app
that feeds input into a TS session on one monitor to simulate a 2nd
session.
